To prepare egg biryani in a step by step procedure firstly, soak and drain rice, frying all dry spices and spice powders, adding egg and fry, cooking rice, dum process and finally, garnish with fried onions, fresh mint and coriander leaves.

A delicious spicy aromatic biryani mixed with boiled eggs, fried onions, dry spiced, spice powders.

Ingredients
Ingredients for egg biryani
  • Basmati rice – 2 cups
  • Boiled eggs – 4
  • Oil – 1/4 cup
  • Ghee – 3 spoons
  • Sliced onions – 3 cup
  • Slit green chili – 2
  • Ginger and garlic paste – 2 spoons
  • Sliced tomato – 2 cup
  • Yoghurt – 3 spoons
  • Mint leaves – 1 cup
  • Coriander leaves – 1 cup
  • Salt – 1 spoon
  • Water – 2 1/2 cup
  • Lemon yellow food colour – 1/4 spoon
Dry spices
  • Cinnamon – 2
  • Bay leaf – 3
  • Clove – 4
  • Cardamon – 3
  • Star Anise – 1
  • Cumin seeds – 1/2 spoon
  • Long pepper – 1
  • Chopped tomato – 1 cup
Spice powders
  • Turmeric powder – 1/4 spoon
  • Red chilli powder – 1 spoon
  • Coriander powder – 1/2 spoon
  • Garam masala powder – 1/2 spoon
  • Biryani powder – 1/2 spoon
Instructions
Procedure for egg biryani
Soaking rice and peeling eggs
  1. Soak the rice in water for at least 15 minutes in a bowl.
  2. Drain the water from rice and set aside.
  3. Boil the eggs, add a little salt while boiling.
  4. Peel boiled eggs and set aside.
Frying all the spices
  1. Heat a pan over a medium flame add ghee and oil.
  2. Add all the dry spices bay leaf, long pepper, cinnamon, cardamon, star anise, cloves, cumin seeds mix.
  3. Add onions mix well. Fry until onions turn into dark golden brown.
  4. Take half of the fried onions in a bowl and set aside.
  5. Add slit green chillies mix.
  6. Add ginger and garlic paste close the lid and fry till the raw smell disappears.
  7. Add sliced tomatoes mix well and wait until it turns little mushy.
  8. Add all the spice powders turmeric powder, salt, red chilli powder, coriander powder, garam masala powder, biryani powder mix well fry for a minute.
  9. Add yoghurt mix well and wait a minute.
  10. Add mint leaves and chopped coriander leaves, give a nice mix.
Adding boiled eggs
  1. Before adding boiled and peeled egg into the mixture.
  2. Take a fork dig the eggs at three different places and add into the mixture. Close the lid and let it fry for 5 minutes.
  3. Pour water and adjust the salt.
Cooking rice
  1. Add rice to boiled water mix well, close the lid and let it cook for 5 minutes.
  2. Open the lid give a mix, add fried onions and fresh mint leaves mix well till very little water is left.
  3. Add lemon yellow food colour and water in a small bowl mix well and add into the rice. This is optional.
Keep all the rice mixture for dum
  1. Close the lid and leave all the rice mixture for dum, for 10 minutes.
  2. The delicious Egg biryani is ready to serve.
Garnish
  1. Garnish with lemon wedges, fried onions, fresh coriander and mint leaves.
  2. Serve hot egg biryani with lemon juice, fried onions and even with raita.
Recipe Notes
