Ingredients

Ingredients for dahi vada:

For urad dal batter:

  • Urad dal -2 cups
  • chopped onions -1/2 cup
  • chopped green chilli -1
  • Chopped coriander leaves -1/2 cup
  • Curry leaves -1/2 cup
  • Baking soda -1/4 spoon
  • Salt -1 spoon
  • oil -for deep fry

For tempering:

  • Oil -4 spoons
  • Tempering seeds -1/2 spoon
  • Ginger and garlic paste -1/2 spoon
  • Curry leaves -1/2 cup
  • Onions -1/2 cup
  • Turmeric powder -1/4 spoon
  • Red chilli powder -1/4 spoon
  • Chopped tomato -1 cup
  • Chopped coriander leaves -1/2 cup

Instructions

Procedure for dahi vada:

soaking urad dal:

  1. Wash and soak urad dal for 5hours.
  2. Drain the water and set aside.

Blending urad dal mixture:

  1. Take a blender jar add urad dal and chopped green chill.
  2. And also add chopped coriander and curry leaves, baking soda, salt.
  3. Blend all of them coarsely.If necessary sprinkle very little water.
  4. Take all the blended batter into a bowl, add chopped onions mix well and set aside.

Tempering and preparing dahi mixture:

  1. Heat a pan add oil, tempering seeds, curry leaves. Let them splutter.
  2. Add onions saute. Add turmeric powder, red chilli powder, salt stir well.
  3. Add chopped tomato and coriander leaves mix well.
  4. Fry until the tomato turns into mashy.
  5. Remove from flame and adjust the salt.
  6. Add curd to the mixture mix well and set aside.

Making vada:

  1. Take blended urad dal batter wet your hands with water.
  2. Take a small lemon sized ball of batter spread it into a vada on a plastic sheet.
  3. Make a hole of vada so that it evenly cooks.
  4. Heat a pan add oil to deep fry over a medium flame.
  5. Drop the vada on hot oil and fry it on both sides until it turns golden brown colour.
  6. Then transfer them to the curd mixture.

Soaking vada in dahi mixture:

  1. Let the vada soak in the curd mixture for 2 minutes.
  2. Flip on other side and let them soak for 3 more minutes.
  3. When they get soaked on both sides and becomes soft.
  4. Add some water to mixture if necessary.
  5. Serve them at room temperature or chilled.
