Ingredients

(1) For chicken

Marination

  • ginger and garlic paste – 1 spoon
  • chicken(skinless & boneless) – 1/2 kg
  • red chilli powder – 1 spoon
  • turmeric powder – 1/4 spoon
  • garam masala powder – 1/2 spoon
  • salt – 1 spoon
  • pepper powder – 1/4 spoon
  • curd – 2 spoons
  • oil – 1 1/2 spoon
  • lemon juice – 1 spoon

Cooking chicken

  • ghee – 3 spoons
  • cubed onions – 1
  • green chilli sauce – 1 spoon
  • red chilli sauce – 1 spoon
  • carrot slices – 3
  • green capsicum – 1
  • tomato – 1
  • cucumber – 1
  • salt – 1 spoon

(2) For pita bread

  • All purpose flour (maida) – 1 cup
  • wheat flour – 2 cups
  • curd – 3 spoons
  • sugar – 1 spoon
  • salt – 1 spoon
  • water – 1/2 glass
  • oil – 3 spoons
  • ghee – 3 spoons

For stuffing

  • tomato sauce – 3 spoons
  • cream – 2 spoons

Instructions

(1) Process for chicken shawarma

Marinating chicken

  1. Take a bowl add (skinless & boneless) chicken and ginger & garlic paste.

  2. Add red chilli powder, turmeric powder, garam masala powder, salt, pepper powder.

  3. Add curd, oil mix well all the ingredients.

  4. Squeeze lemon juice and mix well. Let it rest for 2 hours.

Cooking chicken

  1. Heat a pan add 3 spoons of ghee over a medium flame.

  2. Add marinated chicken with all masala mixture mix well. Cook all the sides for 3 minutes. Add cubed onions mix well.

  3.  Fry until the water in the chicken gets evaporated and the chicken become tender. Close the lid and cook for 5 minutes. When chicken dried completely. Add green chilli and red chilli sauce for spicy chicken shawarma. This is optional.

  4. Add carrot slices, green capsicum slices, tomato slices mix well. Close the lid and cook for 2 minutes.

  5. Switch off the fire add cucumber slices and a spoon of salt mix well. Now the grilled chicken shawarma is ready without oven. Set aside

(2) Process for pita bread

Making dough

  1. Take a bowl add 2 cups of wheat flour(aata), 1 cup of all purpose flour(maida). Add 3 spoons of curd, a spoon of sugar and salt give a mix.

  2. Add little by little water, 2 spoons of oil whisk everything well and knead the dough.

  3. Apply oil on the top of the dough cover and rest it for 2 hours.

Making pita bread

  1. knead the dough soft and smoothly. Divide the dough into 6 equal portions f ball.

  2. Sprinkle a small amount of flour on the rolling pin and on the top of dough ball flat it as a square or rectangular bread(roll as chapati).

  3. Heat a tava over a low flame place the pita bread.

  4. Fry on both sides for 2 minutes till the bread begins to puff up and the bottom has browned. Sprinkle a spoon of ghee and spread on both sides.

  5. Set aside and repeat cooking the rest of the breads.

(3) Making chicken shawarma roll

  1. Take a pita bread apply the tomato sauce.

  2. Place chicken shawarma mixture do not crowd them.

  3. Add a spoon of cream roll the pita bread.

  4. Serve chicken shawarma roll with tomato sauce or yogurt sauce.

Recipe Notes

When chicken becomes tender. Add green chilli and red chilli sauce for spicy chicken shawarma. This is optional.
